Pancakes recipe

My quick and easy recipe for easy pancake batter to prepare for excellent results. It's light, fragrant, nice golden and not too sweet (which lets you catch up on the filling :). Below I give you my tips for success. I try to grease my pans every 3 pancakes with butter in general, and keep them under a sheet of aluminum foil before eating them, they stay warm and soft.

*Ingredients list

°250 g sifted or liquid flour

°4 eggs

°450 ml of slightly lukewarm milk

°2 tbsp. Dark rum or orange blossom, or ½ cup of beer

°1 c. 1 tablespoon of vanilla extract or 1 packet of vanilla sugar

°2 tbsp. a tablespoon of sugar

°pinch of salt

°50 grams melted butter

*Recipe steps :

Melt the butter in the microwave and heat up the milk a little, which should be barely lukewarm (this is to avoid lumps)

Combine the sifted flour, sugar and salt in a large bowl. You can replace 50 grams of flour with cornstarch for extra lightness

Add the eggs and melted butter, then the milk gradually, and beat well with the mixer to avoid the formation of lumps

Add beer, rum or blossom water and vanilla and leave 30 minutes before cooking

Heat a piece of butter in a frying pan and put a ladle of dough

Cook the pancakes on each side, until well browned

As you go, set aside on a plate, and cover with aluminum foil to keep it warm and soft. You should get between 15 and 20 8-inch pancakes.

Enjoy!
